Jerk BBQ Baked Chicken

Ingredients

For the Chicken:

  • 1 lb bone-in, chicken thighs or drumsticks
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp ground allspice
  • 1/2 tsp cayenne pepper adjust spice to preference
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/4-1/2 cup chicken broth optional
  • fresh thyme, garlic and peppers for aromatics

For the Jerk BBQ Sauce

  • 1/4 cup BBQ sauce store-bought or homemade
  • 2 tbsp jerk marinade store-bought or homemade
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or sweetener of choice

Instructions

For the Jerk BBQ Sauce:

  • In a small sauce pan combine, BBQ sauce, jerk marinade, honey and vinegar.
  • Heat over low-medium heat, stirring occasionally, for 5-7 minutes until slightly thickened.
  • Allow sauce to cool for a couple minutes before pouring on chicken.

For the Chicken:

  • Preheat your oven to 375F and line a baking dish with parchment paper or lightly coat with cooking oil.
  • In a small bowl, mix together the garlic powder, onion powder, smoked paprika, thyme, allspice , cayenne, salt and black pepper.
  • Rub the seasoning evenly over the chicken thighs and drumsticks.
  • Arrange the chicken in the prepared baking dish. Cover with foil and bake for 30 minutes.
  • After 30 minutes, remove the foil and add aromatics, along with chicken broth if using and some of the Jerk BBQ sauce.
  • Return to oven, uncovered and bake for an additional 25-30 minutes.
  • Baste the chicken with the sauce and broth and bake for another 10 minutes or until the chicken reaches an internal temperature of 165F and the sauce has caramelized.
  • Let chicken rest 5 minutes before serving.

Notes

Storage:

  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.
  • For longer storage, freeze the chicken in a freezer-safe container or bag for up to 3 months. Be sure to label and date the container.

Reheating:

  • Oven: Preheat the oven to 350°F. Place the chicken in an oven-safe dish, cover with foil, and bake for 15-20 minutes until heated through.
  • Microwave: Heat individual portions in the microwave on medium power for 1-2 minutes, checking to ensure the chicken is heated evenly.
  • Air Fryer: Reheat in the air fryer at 375°F for 5-7 minutes to regain a crispy texture.
